<title><![CDATA[pizza(食譜)]]></title>

	<description><![CDATA[<p>同學仔放學時都問我拎食譜，我估都有blogger想要~</p><p>所以係呢度公開食譜比大家，加上少少我自己的心得，希望大家都成功啦~</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_11/blog/ap_20090319122021801.jpg.jpg?ib_____Dh1dMIl19" border="0" /></p><p>材料﹕暖水140克、instant yeast 7克、糖7克、高根粉250克、鹽7克、橄欖油1.5茶匙</p><p>做法﹕</p><p>(1) 暖水+糖+instant yeast混和至yeast及糖融，靜置在桌上約1-2分鐘</p><p>(2) 將(1)逐少加入已篩過的根粉、鹽及橄欖油，一直搓揉至出根性，成麵團後用保鮮紙蓋面靜置10-15分鐘；即可捍薄成pizza皮，放上喜愛的topping就可以焗喇~</p><p>小撇步﹕</p><p>(1) 暖水就好了，唔需要太熱架~</p><p>(2) 出根性 = 你一直搓，搓到麵團唔黏手就可以喇，最好拉開見到薄膜啦，唔識睇都唔緊要，只要麵團唔會黏手就ok架喇~</p><p>(3) 放topping之前，建議用叉幫pizza皮咭孔孔，可有助疏氣；而topping以乾身為主，可以加少少dressing，但唔好太濕，會影響pizza皮的口感</p><p>(4) 鐘意厚批就整細細個就得喇，鐘意薄批就輾薄佢lu~(呢句好似好無聊，但好多人都問我架，其實呢個pizza皮好順得人，你鐘意厚薄都得)</p><p>(5) 以上的份量可以做到2-3個pizza，食唔哂既你用保鮮紙包好放係雪櫃，可以keep到一個月架~食之前半小時拎出黎解凍就ok~</p><p>(6) 剛焗完的pizza最好放係網架上涼，當然你想既即食唔放都無問題啦，但未食住既就要放係網架上，唔係d熱氣會令到pizza底濕哂架~</p>]]></description>

<title><![CDATA[開班喇3 - pizza vs 格仔曲奇ii]]></title>

	<description><![CDATA[<p>知道有好多朋友同事都鐘意呢款曲奇</p><p>又好想要食譜，經首席弟子傻芬的努力練習及要求下</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_10/blog/ap_20090307012613246.jpg.jpg?ib_____DfCSli7u3" border="0" /></p><p>將食譜在此分享啦~</p><p>其實我教大家整呢款曲奇，都係多得Vanlily公開食譜</p><p>所以都要多謝未曾見過面，但我十分佩服的Vanlily小姐</p><p><span><font face="Arial"><span>以下的份量可製作約20件，我加入了教班及自家製作了多次的心得，可放心跟住做</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>材料﹕牛油 100克、</span></font></span><span><font face="Arial"><span>糖粉 60克、</span></font></span><span><font face="Arial"><span>雞蛋 40克、</span></font></span><span><font face="Arial"><span>低粉 200克、</span></font></span><span><font face="Arial"><span>泡打粉 2克、</span></font></span><span><font face="Arial"><span>鹽 2克、Fox's果汁糖1罐(每粒糖平均切開兩邊)</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>做法﹕</span></font></span></p><p><span><font face="Arial"><span>(1) 室溫放軟牛油，加入糖粉及鹽打至鬆發</span></font></span></p><p><span><font face="Arial"><span>(2) 逐少加入蛋液，直至蛋汁完全混入牛油糊</span></font></span></p><p><span><font face="Arial"><span>(3) 篩入低粉及泡打粉，用刮刀以切拌法與(2)混合 </span></font></span></p><p><span><font face="Arial"><span>(4) 將(3)弄成糰及稍為捍平，放入冰格冷藏約半小時，以餅模印出通心曲奇</span></font></span></p><p><span><font face="Arial"><span>(5) 將糖放於曲奇通心位置，以焗爐150-160度焗至糖融及曲奇變金黃色即可出爐。</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>小撇步﹕</span></font></span></p><p><span><font face="Arial"><span>(1) 糖需要切半，每次通花曲奇中間可放半粒至1粒的糖，糖會在焗製時融化成為大家見到的通透玻璃；我想講，混合色的糖係好靚架，意思係可以將兩粒唔同色的糖放係同一塊曲奇焗。</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>(2) 糖越薄越好，唔係就會太硬喇；唔知大家用咩曲奇模同size，好難比comment。</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>(3) 想要曲奇皮夠鬆化，牛油一定要軟化得夠，但唔可以座熱水整成液體，比d耐性早d拎舊牛油出黎放室溫啦~~</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>(4) 做法的步驟(4)將麵團稍為壓平先雪，係方便新手整曲奇既你，係冷藏後快手印曲奇，減省要將硬身的麵團再捍開的煩惱。而且印完用剩的曲奇皮可以輕手將佢地推番埋一塊皮再印過~~</span></font></span></p><p><span><font face="Arial"><span></span></font></span></p><p><span><font face="Arial"><span>希望大家都成功﹗</span></font></span></p>]]></description>

<title><![CDATA[扭紋曲奇]]></title>

	<description><![CDATA[<p>尋晚胡先生話今日要同佢d大學同學食飯</p><p>咁我就想整d曲奇帶比佢地食啦~</p><p>陳老三話都想整，咁我地又兩條友睇食譜書揀下揀下</p><p>最後就決定整扭紋曲奇</p><p>話時話，我整過格仔曲奇，扭紋真係第一次</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_11/blog/ap_20090308012245296.jpg.jpg?ib_____DBDsoOOgj" border="0" /></p><p>入爐前既咖啡扭紋曲奇~好似花生醬~</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_11/blog/ap_20090308012312403.jpg.jpg?ib_____DMPIMX1kN" border="0" /></p><p>呢個係芋頭味</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_11/blog/ap_20090308012334323.jpg.jpg?ib_____DMps78UOf" border="0" /></p><p>好大堆頭~~焗到12點幾焗起四盤~</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_11/blog/ap_20090308012357368.jpg.jpg?ib_____DMfelwjuj" border="0" /></p><p>我個人最喜愛既始終都係咖啡味~</p><p><img src="http://f20.yahoofs.com/hkblog/q8Pppi__DOT__RHhS1zBCM438-_11/blog/ap_20090308012422807.jpg.jpg?ib_____D7jgc33lN" border="0" /></p><p>我pack起左一盒比胡先生既朋友，希望佢地鐘意食啦~</p><p>好耐無出食譜，今次比大家試下整呃~份量約15-20塊</p><p>材料﹕低粉150克、糖粉50克、蛋30克、牛油(室溫放軟)70克、香芋及咖啡色膏各1-2滴</p><p>做法﹕</p><p>(1) 將牛油及糖粉打至鬆發，逐少加入蛋液及攪拌成牛油蛋糊</p><p>(2) 將低粉過篩，與(1) 以切拌法拌勻成麵團</p><p>(3) 將麵團分成4份，其中兩份原味麵團分別壓平放於保鮮紙上；另外兩份分別混入色膏</p><p>(4) 將芋頭味麵團及咖啡味麵團分別壓平及各自放於原味麵團上；以捲壽司一樣的做法，將麵團捲起並用保鮮紙包實雪於冰箱內約20分鐘。取出切薄片，預熱焗爐180度焗15分鐘左右即可。</p><p>小撇步﹕</p><p>有很多朋友都不喜歡用色膏，如果想整朱古力味可用可可粉代替，約5-8克；咖啡味亦可用咖啡粉代替，同樣份量為5-8克(芋頭味未有方法替代呢~)</p>]]></description>

<title><![CDATA[開班喇]]></title>
